What is Carboxymethyl Cellulose?
Thickener, stabilizer; Tissue improver; Gelling agent. Non-nutritive leavening agent; Water movement control agent; Foam stabilizer; Reduces fat absorption. Used for ice cream to improve water retention and tissue structure (0.3% ~ 0.5%) due to its viscosity, stable characterization, protective colloid, film formation, etc. But it needs to be used together with sodium alginate.
